Have you Unearthed ‘Nduja?

This has got to be my latest ‘Perfect Product’. I discovered it a while ago and keep trying a little of it in various dishes. ‘Nduja is a spicy, spreadable cured pork sausage from Calabria in Southern Italy but it’s now being brought to us by those lovely people at Unearthed.

There’s far too much in a packet to use all at once ….unless you’re greedy that is! I’ve discovered that if you cut it into about 12 pieces and stick it in the freezer you can then add a lump or two to your recipe, depending on the amount of heat you want. Because of the high fat content it just melts itself in the pan!

So far I’ve added it to a crab pasta dish and tonight it’s gone into a bean casserole with sausages. Use it in any dish when you want an extra little kick.

EDIT: Unfortunately this product has been discontinued! Any other brands out there?

Hi Ho Silverwood

I was making puds today for a family party this weekend when I realised how much I rely on my Silverwood baking tins! My much loved sticky toffee pudding recipe makes enough for 16 small puds and 8 larger ones as well so my multi cake pan is invaluable.

My small pudding moulds get used for everything from desserts to mousses (see my broccoli mousse recipe here) I also use them for serving out dinner party style servings of rice or risotto.

I bought the tarte tatin dish for my other half as it’s perfect for making his one signature pudding. It has a good solid base so you can perfectly caramelise the apples before adding the pastry.

I’m adding some more Silverwood stuff to my wish list …..the multi mini heart set would make great Valentine cakes….and the Brownie pans look tempting…..or maybe I’ll just buy myself the Panettone pan before Christmas!!

Waitrose Cooks Ingredients


This weeks PERFECT PRODUCT is actually several products……Waitrose Cooks Ingredients frozen chopped herbs and spices. I have a selection of different ones in my freezer, and I use at least one of them most days. Mostly the coriander, ginger and jalapeno peppers, closely followed by basil and mint. Forget that plastic pot of wilting herbs on the windowsill – these self seal foil packs are the best!!

Nomu Poultry Rub


Nomu Poultry Rub is my latest ‘Perfect Product’.
It’s one of those magic finds that is now an essential store cupboard ingredient.Just rub this blend of thyme, sage, oregano, paprika, lemon and ground pepper into the lightly oiled skin of a chicken before roasting. Or rub into chicken pieces for the barbecue. If you’ve ever had one of those spit roast chickens on holiday in Spain this is the nearest you’ll get to bringing back that taste! (Although it’s a South African product!)
I bought mine from the Burford Garden Centre for £3.75.

Yeo Valley Mango and Vanilla Yogurt


This yogurt from Yeo Valley has inspired me to occasionally tell you about a ‘PERFECT PRODUCT’ ! As a compulsive recycler I try not to throw anything away so the packaging is spot on – a recyclable plastic pot with a recyclable cardboard wrapper. On the reverse of the wrapper is a great cheesecake recipe that I will definitely try ……oh and the yogurt is delicious!
